The lamington is an iconic and much-loved Australian dessert, but it was long overdue for a bit of an upgrade. And our very own Brookvale’s LusciousKiki Cakes has accepted the challenge. Kirin “Kiki” Tipping is the one-woman show behind the micro-bakery and has been baking lamingtons in flavours like salted caramel and ruby red velvet since 2012.

Kiki has lived on the Beaches for almost her entire adult life after falling in love with the area as a child. She has fond memories of visiting her Nan who lived in Manly. It was also family who sparked her wonderful Beaches business. Twelve years ago her then 8-year-old twin nieces inspired her to create different flavoured lamingtons after a disappointing experience with cupcakes.

Now Kiki’s lamingtons are legendary, and it’s easy to see why! The pillowy squares she creates are super fresh, and also a little unconventional taking the iconic Aussie dessert to new culinary heights with a range of innovative flavours – many made with native ingredients. 

“At Luscious, I grow lemon myrtle, anise myrtle, cinnamon myrtle, native currant, finger lime, mint bush, bush basil, native raspberry, old man saltbush and boobala,” Kiki explains. “I have used most of these to create new flavours, and also source a lot from other Indigenous-owned businesses like Bush to Bowl Nursery.”

Kiki’s most popular flavours are the Old Salty (salted caramel) and Ruby Red Velvet (New York style red velvet cake), however lamington lovers can also delight in the Passionate Lemon, Salted Honey Coma, Zorba (baklava-style), Chocolate Coma, Pepperberry Sunrise, and Citron Fudge. They’re available in two sizes: a ‘slab’ with 14 regular-sized lamingtons or 24 two-bite mini lamingtons.

From Sunday to Thursday, Kiki dedicates her baking efforts on wholesale supply to local cafes including Bacino Bar in Curl Curl, Gusto On the Beach in Curl Curl, Fuel Espresso Bar in Brookvale and Narrabeen, and Little Italy Coffee Roasters in Frenchs Forest. However, her Lamington Parlour opens to the public on Friday and Saturday from 8am to 3pm with a beautiful selection of lamingtons, slices, cakes, brownies, biscuits and pastries. All are made in-house and many are based on cherished family recipes, and served alongside coffee, tea, hot chocolate, handmade lemonade, ginger beer and ice tea. 

As a hospitality veteran, Kiki has seen many wasteful practices in daily operations and is committed to sustainability through the use of energy efficient work practices, no harsh chemicals, recyclable packaging, composting, minimal wastage of food products and essentially baking to order. 

What’s more to love is that Kiki has been supporting Northern Beaches Women’s Shelter for about six years by donating desserts to the residents, prizes for their fund raisers and more recently, running cooking classes there.
