Queue-out-the-door Italian sandwich pop up Tommy Panini from celebrity chef Tom Morrison is now open permanently in Brookvale.
Get ready, Northern Beaches foodies! Tommy Panini, the beloved Italian-inspired sandwich shop, has just announced its grand re-opening in Brookvale – this time, it’s not a pop-up! After a hugely successful initial run, Tommy Panini is back by popular demand and here for good, ready to serve up its unique and delicious panuzzo sandwiches.
Founded by celebrity private chef and hospitality veteran Tom Morrison, Tommy Panini quickly became a local sensation. “When we first opened, we were selling around 30-40 sandwiches a day,” recalls Morrison. “Before we closed at the end of last year, we were regularly hitting 300+ sandwiches a day! The community’s response was incredible, and we knew we had to come back permanently.”
Tommy Panini offers a unique lunch experience, blending the flavours of traditional Italian cuisine with a modern, Instagram-worthy twist. Each panini starts with a base of Vannella fior di latte cheese and features dough infused with rosemary and garlic oil, expertly ‘wood-fired’ at 400°C in wood fired pizza ovens. The result is a tantalizing char that enhances the flavors of the fillings.
All the classic favourites are back on the menu, including the popular Chicken Cotoletta with Calabrian chilli mayo, sun-dried tomato tapenade, zucchini pickle, shaved parmigiano, and rocket, and the traditional Mortadella panini. But that’s not all! Tommy Panini is also introducing a new, more indulgent and nostalgic offering: the Chicken Coletta with spicy vodka sauce, Vanella buffalo mozzarella and pesto.
“Our goal has always been to offer Sydneysiders something different – not just another sandwich, but a culinary experience,” says Morrison. “We make all our sauces, spreads, and pickles in-house, and source our ingredients locally, ensuring every bite is filled with quality and flavor. We’re so excited to be back and to be a permanent part of the Brookvale community.”
