Salsa Sundays, margarita Mondays, taco Tuesdays… every day will be an excuse for a Mexican fiesta in Manly when Darlinghurst’s beloved restaurant Tommy’s opens soon!

It hasn’t been an easy ride for Sydney locals and close mates David Cooper and Brett Ayton who opened their Darlinghurst restaurant and cocktail bar Tommy’s two weeks before lockdown in June 2021. However, with the support of their community (and a few takeaway margaritas), the pair survived and are now thrilled to announce the opening of their brand new venue. Tommy’s Manly will open on Belgrave St in early July. 

“We chose Manly because we feel like it really suits the cuisine we serve,” David explains. “Mexican and South American cuisine, right near the beach and the harbour, cold margaritas on hot summer days; it just works perfectly.”

Tommy’s will replicate the winning formula of their Darlinghurst venue, offering a similar Mexican and South American-inspired menu with a modern Australian twist.

Head chef Marcus Michel, who hails from Brazil, and sous chef Anthony Pino, from Peru, showcase the flavours and cooking techniques of South America in must-try menu items like the kingfish ceviche, ribeye steak and chargrilled octopus.

“We use an Argentinian parilla grill – a traditional South American cooking method where meats and veggies are cooked over coals giving them so much more flavour and texture,” says David.

While the food is a major draw, Tommy’s is just as famous for its margaritas. The restaurant prides itself on using only the freshest ingredients, with juices freshly squeezed daily, and syrups and cordials made in-house. This commitment to freshness is also evident in the bar’s unique selection of tequila and mezcal-based cocktails.

“In terms of specials, our bottomless brunch is a big hit,” David adds. “It includes two hours of bottomless classic and spicy margaritas, beer, wine and bubbles, paired with a seven-dish Mexican banquet for just $99 per person. It’s available during lunch Wednesday-Sunday and people seem to really enjoy it.”

Tommy’s Manly will provide a beautiful space for family and friends to gather, with an outdoor courtyard that welcomes four-legged friends. If all goes to plan, Tommy’s will open its doors on Wednesday July 5.
